Ever a new dawn. Infinite Dawn launched us into the Outer Reaches in 2018. This Sour Blonde Ale is matured in an oak foeder where it is introduced to our house Lactobacillus and Brettanomyces strains—Infinite Dawn emerges full of bright fruit character, tart complexity, and a dry finish.
Light gold with slight haze and minimal foam, aromas of apple, pear and stone fruit are accented by subtle hints of brett funk. Complex acidity hits the palate up front, leading to a dry, crisp finish. The body is effervescent and fleeting, with a quick, refreshing finish.
